Description

A comforting and easy-to-make cheesy ground beef melt, perfect for chilly evenings and gatherings.

Ingredients

  • 1 lb ground beef (seasoned)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/2 tsp salt (adjust to taste)
  • 2 tbsp tomato paste
  • 1/2 cup beef or chicken broth
  • 8 slices sturdy sandwich bread or rolls
  • 2 cups shredded cheese (cheddar, mozzarella, or a blend)
  • 2 tbsp butter, softened
  • Optional garnish: chopped parsley or scallions

Instructions

  1. Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it into small pieces.
  2. Add chopped onion and cook 4–5 minutes until translucent. Stir in garlic, smoked paprika, oregano, salt, and pepper.
  3. Mix in tomato paste and broth; simmer 3–4 minutes until slightly thickened. Taste and adjust seasoning. Remove from heat.
  4. Preheat your oven to 375°F (190°C).
  5. Spread butter lightly on one side of each bread slice. Place buttered side down on a baking sheet or in a shallow baking dish.
  6. Spoon a generous layer of the beef mixture onto each bread slice, then top with a generous sprinkle of shredded cheese. Place a second slice of bread on top if making closed melts, or leave open-faced for extra cheese exposure.
  7. Bake 10–12 minutes until the cheese is melted and edges are golden. If you like extra browning, place under the broiler for 1–2 minutes — watch closely to avoid burning.
  8. Garnish with parsley or scallions and serve hot.

Notes

Use fresh, well-seasoned ground beef for the best flavor. Shred your own cheese for better meltiness, and toast the bread lightly for crispier results.
