A comforting and easy-to-make cheesy ground beef melt, perfect for chilly evenings and gatherings.
Ingredients
- 1 lb ground beef (seasoned)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp black pepper
- 1/2 tsp salt (adjust to taste)
- 2 tbsp tomato paste
- 1/2 cup beef or chicken broth
- 8 slices sturdy sandwich bread or rolls
- 2 cups shredded cheese (cheddar, mozzarella, or a blend)
- 2 tbsp butter, softened
- Optional garnish: chopped parsley or scallions
Instructions
- Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it into small pieces.
- Add chopped onion and cook 4–5 minutes until translucent. Stir in garlic, smoked paprika, oregano, salt, and pepper.
- Mix in tomato paste and broth; simmer 3–4 minutes until slightly thickened. Taste and adjust seasoning. Remove from heat.
- Preheat your oven to 375°F (190°C).
- Spread butter lightly on one side of each bread slice. Place buttered side down on a baking sheet or in a shallow baking dish.
- Spoon a generous layer of the beef mixture onto each bread slice, then top with a generous sprinkle of shredded cheese. Place a second slice of bread on top if making closed melts, or leave open-faced for extra cheese exposure.
- Bake 10–12 minutes until the cheese is melted and edges are golden. If you like extra browning, place under the broiler for 1–2 minutes — watch closely to avoid burning.
- Garnish with parsley or scallions and serve hot.
Notes
Use fresh, well-seasoned ground beef for the best flavor. Shred your own cheese for better meltiness, and toast the bread lightly for crispier results.
