Description

A delightful blend of ripe tomatoes, fragrant basil, and aromatic garlic, all enveloped in a golden, crusty bread, perfect for autumn gatherings.


Ingredients

  • 4 cups all-purpose flour (or gluten-free blend)
  • 2 ¼ teaspoons active dry yeast
  • 1 ½ cups warm water (around 110°F)
  • 2 tablespoons olive oil
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 4 cloves garlic, finely minced
  • 2 medium tomatoes, diced (preferably Roma)
  • ½ cup fresh basil, chopped (plus extra for garnish)
  • ½ cup grated Parmesan cheese (optional)


Instructions

  1. Mix the warm water, sugar, and yeast in a small bowl. Allow it to sit for about 5-10 minutes until foamy.
  2. Combine the flour and salt in a large mixing bowl. Make a well in the center and add the olive oil and the yeast mixture once it’s frothy.
  3. Knead the ingredients to form a dough. Turn it onto a floured surface and knead for about 8-10 minutes until smooth.
  4. Fold in the minced garlic, diced tomatoes, and chopped basil into the dough. If using cheese, mix it in at this stage.
  5. Transfer the dough to a greased bowl, cover with a kitchen towel, and let it rise in a warm place until doubled in size, about 1 hour.
  6. Punch down the risen dough gently. Shape it into a loaf or divide into smaller rolls and place them onto a greased baking sheet.
  7. Cover the shaped dough and let it rise again for 30-40 minutes, until slightly puffed.
  8. Preheat your oven to 375°F (190°C). Bake the bread for 25-30 minutes until golden brown and hollow when tapped.
  9. Cool slightly before slicing. Enjoy warm, drizzled with olive oil and sprinkled with fresh basil!
