Description

This one-pan carrot side dish is bold, warm, and just the right amount of sweet and spicy. Perfect for holiday feasts or quick weeknight dinners.


Ingredients

  • 1 pound carrots – peeled and sliced diagonally
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon sea salt
  • Fresh parsley (optional), for garnish


Instructions

  1. Peel and slice the carrots diagonally into ¼ inch thick pieces.
  2. In a large non-stick skillet, heat olive oil over medium heat. Add carrots and sauté for 6–8 minutes until starting to soften.
  3. Reduce heat to low. Drizzle honey over the carrots and stir to coat evenly. Add cayenne, cinnamon, and sea salt. Stir for 2–3 minutes until well-glazed.
  4. Cover the skillet and let simmer for 5–6 more minutes until carrots are fork-tender and glaze has thickened.
  5. Transfer to a serving dish and garnish with fresh parsley if desired. Serve warm.

Notes

Slice carrots evenly for consistent cooking. Adjust cayenne to taste. Let the glaze simmer to fully coat the carrots without burning.
