Ingredients

  • 6 cups baby spinach
  • 2 cups fresh strawberries, sliced
  • 1/2 cup crumbled feta or goat cheese
  • 1/4 cup thinly sliced red onion
  • 1/3 cup toasted pecans or almonds
  • 1 avocado, sliced (optional)
  • 1/4 cup dried cranberries or blueberries (optional)
  • 2 tablespoons sunflower seeds (optional)
  • Salt and pepper to taste
  • Dressing:
  • 1/4 cup olive oil
  • 2 tablespoons balsamic or apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1 teaspoon poppy seeds (optional)


Instructions

  1. Wash and dry baby spinach thoroughly. Place in a large salad bowl.
  2. Slice strawberries and red onions. Add to the spinach.
  3. Add crumbled feta or goat cheese, toasted nuts, and any optional ingredients like avocado or dried fruit.
  4. In a separate bowl, whisk together olive oil, vinegar, honey or maple syrup, Dijon mustard, and poppy seeds until well combined.
  5. Drizzle dressing over the salad just before serving and toss gently to coat.
  6. Season with salt and pepper to taste. Serve immediately.
