Description

A cozy, forgiving cake that celebrates seasonal strawberries, perfect for birthdays and small gatherings.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup sugar
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 1/2 cup plain yogurt
  • 1/2 cup milk
  • 1 1/2 cups diced fresh strawberries (reserve a few for decoration)
  • Optional: lemon zest for brightness


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round pan and line the bottom with parchment paper.
  2. Whisk together flour, baking powder, baking soda, and salt in a bowl.
  3. Beat the softened butter and sugar until light and fluffy (about 2–3 minutes). Add eggs one at a time, mixing after each addition, then stir in vanilla.
  4. Add half the dry ingredients, then the yogurt and milk, followed by the remaining dry ingredients, mixing until just combined. Gently fold in the diced strawberries.
  5. Pour batter into the prepared pan and smooth the top. Bake for 30–35 minutes, or until a toothpick comes out clean.
  6. Let the cake cool in the pan for 10 minutes, then remove to a wire rack. Top with whipped cream, strawberry slices, and a sprinkle of lemon zest if using.

Notes

For best results, use room temperature ingredients and avoid overmixing the batter.
