A cozy, forgiving cake that celebrates seasonal strawberries, perfect for birthdays and small gatherings.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 1/2 cup unsalted butter, softened
- 3/4 cup sugar
- 2 large eggs, at room temperature
- 1 tsp vanilla extract
- 1/2 cup plain yogurt
- 1/2 cup milk
- 1 1/2 cups diced fresh strawberries (reserve a few for decoration)
- Optional: lemon zest for brightness
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round pan and line the bottom with parchment paper.
- Whisk together flour, baking powder, baking soda, and salt in a bowl.
- Beat the softened butter and sugar until light and fluffy (about 2–3 minutes). Add eggs one at a time, mixing after each addition, then stir in vanilla.
- Add half the dry ingredients, then the yogurt and milk, followed by the remaining dry ingredients, mixing until just combined. Gently fold in the diced strawberries.
- Pour batter into the prepared pan and smooth the top. Bake for 30–35 minutes, or until a toothpick comes out clean.
- Let the cake cool in the pan for 10 minutes, then remove to a wire rack. Top with whipped cream, strawberry slices, and a sprinkle of lemon zest if using.
Notes
For best results, use room temperature ingredients and avoid overmixing the batter.
