Ingredients
- 4 ripe nectarines, sliced
- 2 cups fresh strawberries, halved
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 1/2 tsp ground cinnamon
- 1 cup old-fashioned oats
- 1/2 cup all-purpose flour
- 1/3 cup brown sugar
- 1/2 cup cold unsalted butter, cubed
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine sliced nectarines, strawberries, granulated sugar, lemon juice, cornstarch, and cinnamon. Toss gently.
- Pour the fruit mixture into a buttered 8×8-inch baking dish.
- In a separate bowl, mix oats, flour, and brown sugar. Cut in cold butter until mixture is crumbly.
- Sprinkle the oat topping evenly over the fruit.
- Bake for 35–40 minutes, until topping is golden and fruit is bubbling.
- Serve warm with vanilla ice cream or chilled the next day.
Notes
Use the ripest fruit you can find for the best flavor. Refrigerate leftovers and reheat at 300°F for 10–15 minutes to maintain a crisp topping.
