A comforting bowl of spicy ground beef and garlic sautéed vegetables, perfect for quick, hearty dinners.
Ingredients
- 1 lb ground beef
- 3 tablespoons vegetable oil
- 1 medium onion, thinly sliced
- 3 cloves garlic, minced
- 1 large carrot, julienned
- 1 red bell pepper, sliced
- 2 cups broccoli florets
- 2 tablespoons soy sauce (use tamari for gluten-free)
- 1 tablespoon rice vinegar
- 1–2 teaspoons chili paste or sriracha (adjust to taste)
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and black pepper, to taste
- 2 green onions, sliced for garnish
- Cooked rice or noodles, for serving
Instructions
- Prep everything first: Slice vegetables, mince the garlic, and have your sauces measured. Mise en place keeps the stir-fry fast and stress-free.
- Brown the beef: Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the ground beef and brown until no pink remains. Break it up with a spatula. Season with salt, pepper, cumin, and smoked paprika. Once cooked, remove beef to a bowl and set aside.
- Sauté the garlic veggies: Add remaining oil to the pan. Toss in onion, carrot, bell pepper, and broccoli. Cook for 4–6 minutes until vegetables are crisp-tender. Stir in the minced garlic for the last minute.
- Build the sauce: In a small bowl mix soy sauce, rice vinegar, and chili paste. Pour over the vegetables, then return the browned beef to the pan. Stir to combine and heat through for 2–3 minutes.

Notes
