Description

This Smoked Sausage and Peppers Skillet wraps you in warmth with sizzling sausage, tender peppers, and bold flavor, all in just 30 minutes and one pan. Cozy, quick, and incredibly satisfying.

Ingredients

  • 1 tablespoon olive oil
  • 1 smoked sausage (beef or chicken), sliced into ¼-inch rounds
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, thinly sliced
  • 2 cloves garlic, minced
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley (optional, for garnish)
  • Optional: 1 small zucchini or potato, diced
  • Optional: Crushed red pepper flakes for heat
  • Optional: Shredded mozzarella or provolone

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook 5–6 minutes until browned on both sides. Remove and set aside.
  2. In the same skillet, add more oil if needed. Add onions and bell peppers. Sauté 6–8 minutes until tender-crisp. Add garlic and smoked paprika, stir until fragrant.
  3. Return sausage to the skillet. Stir everything together and cook another 2–3 minutes. Season with salt and pepper.
  4. Garnish with fresh parsley and serve hot. Enjoy with rice, pasta, or crusty bread.

Notes

Use a cast iron skillet for rich browning. Slice evenly for even cooking. Don’t overcook peppers,  they should stay tender-crisp. Add cheese, potatoes, or greens for variety. Great for leftovers and meal prep, store airtight in the fridge up to 4 days or freeze up to 2 months.
