Ingredients
- 1 tablespoon olive oil
- 1 smoked sausage (beef or chicken), sliced into ¼-inch rounds
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small red onion, thinly sliced
- 2 cloves garlic, minced
- ½ teaspoon smoked paprika
- Salt and black pepper to taste
- Fresh parsley (optional, for garnish)
- Optional: 1 small zucchini or potato, diced
- Optional: Crushed red pepper flakes for heat
- Optional: Shredded mozzarella or provolone
Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook 5–6 minutes until browned on both sides. Remove and set aside.
- In the same skillet, add more oil if needed. Add onions and bell peppers. Sauté 6–8 minutes until tender-crisp. Add garlic and smoked paprika, stir until fragrant.
- Return sausage to the skillet. Stir everything together and cook another 2–3 minutes. Season with salt and pepper.
- Garnish with fresh parsley and serve hot. Enjoy with rice, pasta, or crusty bread.
Notes
