Ingredients
- 1.5 lbs sirloin steak, cut into 1-inch cubes
- 1.5 lbs baby potatoes, halved
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 small onion, sliced
- 1/2 cup beef broth
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- Salt and black pepper, to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Pat the steak cubes dry and season with salt and pepper. Halve the baby potatoes.
- In a hot skillet, melt 1 tbsp butter and quickly brown steak cubes for 1–2 minutes per side. Transfer to the slow cooker.
- In the same skillet, melt remaining butter, add minced garlic and sliced onion, and sauté for 1–2 minutes until fragrant. Add beef broth and Worcestershire sauce, scraping up any browned bits.
- Place potatoes in the slow cooker, nestle seared steak on top, and pour the garlic butter sauce over everything. Sprinkle thyme, then cover and cook on low for 4–5 hours or high for 2–3 hours.
- Taste and adjust seasoning. Garnish with fresh parsley and serve hot.
Notes
For a richer sauce, stir in an extra tablespoon of butter right before serving. Ensure even-sized pieces for best cooking results.
