Ingredients
- 1 lb chicken breasts
- 1 cup salsa
- 2 cups cooked rice
- 2 ripe avocados, diced
- 1/2 cup chopped cilantro
- 1 cup cheese, shredded
- 1 can beans, drained (black or pinto)
- 1/4 cup cilantro lime vinaigrette
Instructions
- Place chicken breasts in the slow cooker and cover with salsa.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks.
- In a bowl, combine the shredded chicken with cooked rice, diced avocados, chopped cilantro, cheese, and beans.
- Drizzle with cilantro lime vinaigrette before serving.

Notes
