Ingredients
- 2 pounds boneless, skinless chicken breasts
- 1 cup low-sodium chicken broth
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
- Salt and pepper to taste
- Juice of 1 lemon
- Fresh parsley (for garnish)
Instructions
- Rinse the chicken breasts under cold water and pat them dry with paper towels. Season both sides generously with salt and pepper.
- In a skillet over medium-high heat, add olive oil. Once hot, sear the chicken breasts for about 3-4 minutes on each side until golden brown.
- In a small bowl, combine garlic powder, onion powder, thyme, rosemary, and paprika. Rub this mixture over the chicken breasts evenly.
- Place the seasoned chicken breasts in the slow cooker. Pour the chicken broth over the top, and squeeze the lemon juice over the chicken.
- Cover the slow cooker and set it on low for 6-7 hours or high for 3-4 hours.
- Once cooked, shred the chicken breasts with two forks and mix with the broth. Serve warm, garnished with freshly chopped parsley.
