A cozy and colorful salad featuring seasoned ground beef, fresh veggies, and crunchy Doritos.
Ingredients
- 1 lb ground beef, cooked and seasoned with taco spices
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 large head romaine lettuce, chopped
- 2 cups shredded cheddar cheese
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, canned, or thawed frozen)
- 1 bag nacho-flavored Doritos, lightly crushed
- 1 cup ranch dressing or salsa ranch for tossing
- Optional: sliced avocado, chopped cilantro, lime wedges
Instructions
- Cook and season the meat: Heat a skillet over medium heat and brown the ground beef until no pink remains. Drain excess fat. Stir in chili powder, cumin, garlic powder, salt, and pepper. Add a splash of water and simmer for 2–3 minutes to meld flavors.
- Prep the veggies and beans: Chop the lettuce, halve tomatoes, slice onion, and rinse the black beans. Keep ingredients chilled until assembly.
- Assemble the salad: In a large bowl, layer chopped romaine, black beans, corn, tomatoes, and red onion. Add the warm seasoned beef over the top, then sprinkle shredded cheddar. Drizzle with ranch dressing and gently toss so the warm meat slightly wilts the lettuce without making it soggy.
- Add the Doritos crunch: Just before serving, sprinkle crushed Doritos over the salad so they stay crisp. For extra fun, serve a bowl of whole chips alongside for scooping.
Notes
Keep the chips crunchy by adding them just before serving. Store leftover components separately for best results.
