A cozy fall-inspired bowl featuring warm roasted squash, buttery mashed potatoes, and caramelized burger patties, perfect for chilly evenings.
Ingredients
- 1 lb ground beef (80/20 for the best crust)
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 2 tbsp neutral oil (for high-heat searing)
- 4 slices cheddar or American-style cheese
- 2 cups baby spinach or mixed greens
- 2 cups roasted butternut squash cubes (seasoned with thyme)
- 2 cups mashed potatoes (buttery, smooth)
- 1/2 cup quick pickled red onion (thinly sliced)
- 1/4 cup burger sauce (mix mayo, ketchup, a dash of mustard, and a tiny splash of pickle juice)
- Optional: chopped chives or parsley for garnish
Instructions
- Prep the bowls: Divide mashed potatoes among four bowls, creating a small well in each. Arrange roasted squash and greens beside the mash. Scatter pickled onions on top of the greens.
- Season and portion: Divide the ground beef into 8 equal balls (about 2 oz each) and season lightly with salt, pepper, and garlic powder.
- Heat the pan: Warm a heavy skillet or griddle over high heat until shimmering. Add a little oil.
- Smash and sear: Place 2 beef balls per serving onto the hot surface, using a flat spatula to press each ball firmly into a thin patty. Cook without moving for 2–3 minutes until deep brown and crisp at the edges.
- Flip and finish: Flip once, add a small piece of cheese to each patty, and cook another 45–60 seconds until the cheese melts.
- Assemble the bowl: Layer the crisped patties over the mashed potatoes, drizzle with burger sauce, and sprinkle chopped chives. The hot patties will warm the bowl and melt the cheese into the mash for an indulgent bite.
Notes
Get the pan very hot for a good crust; don’t overwork the meat; use 80/20 ground beef for best results.
