Description

A delicious blend of roasted chicken, crispy bacon, fresh greens, and tangy dressing, perfect for a cozy meal.


Ingredients

  • 3 cups cooked chicken, shredded or chopped
  • 6 slices smoked turkey bacon, cooked until crisp, chopped
  • 6 cups mixed salad greens (baby spinach, arugula, or romaine)
  • 1 cup cherry tomatoes, halved
  • 1 large cucumber, sliced
  • 1/2 cup shredded cheddar or crumbled feta
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup mayonnaise
  • 2 tbsp plain yogurt or sour cream
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp maple syrup or honey
  • Salt and pepper to taste
  • Optional: chopped chives or fresh herbs for garnish


Instructions

  1. Prep the chicken: If using raw chicken, roast at 400°F (200°C) for 20–25 minutes (internal temp 165°F/74°C), then shred.
  2. Make the dressing: Whisk together mayonnaise, yogurt, Dijon mustard, apple cider vinegar, maple syrup, salt, and pepper until smooth.
  3. Cook the bacon: Cook smoked turkey bacon until crisp, drain on paper towels, then chop into bite-sized pieces.
  4. Assemble: In a large bowl, combine greens, chicken, tomatoes, cucumber, red onion, cheese, and bacon. Toss gently with dressing until everything is lightly coated.
  5. Serve: Garnish with chives or herbs and serve with warm crusty bread or baked dinner rolls for a cozy meal.

Notes

For extra crunch, keep the bacon and salad greens separate until just before serving. Using warm chicken helps meld the flavors.
