Ingredients
- 4 medium-sized beets (golden or red)
- 4 ounces feta cheese (crumbled)
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon fresh lemon juice
- Salt and pepper, to taste
- Fresh herbs (such as thyme or parsley), for garnish
- Optional: 1 tablespoon honey or maple syrup for a touch of sweetness
Instructions
- Preheat your oven to 400°F (200°C). Rinse the beets under cool water, peel them, and cut into cubes.
- Drizzle olive oil, balsamic vinegar, and lemon juice in a bowl. Add salt and pepper, then toss the beet cubes to coat.
- Spread the seasoned beets onto a baking sheet lined with parchment paper and bake for 30-35 minutes until fork-tender.
- Remove the beets from the oven and sprinkle crumbled feta over the warm beets.
- Garnish with fresh herbs and serve warm as a side dish or appetizer.
Notes
