  • 4 medium-sized beets (golden or red)
  • 4 ounces feta cheese (crumbled)
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon fresh lemon juice
  • Salt and pepper, to taste
  • Fresh herbs (such as thyme or parsley), for garnish
  • Optional: 1 tablespoon honey or maple syrup for a touch of sweetness


Instructions

  1. Preheat your oven to 400°F (200°C). Rinse the beets under cool water, peel them, and cut into cubes.
  2. Drizzle olive oil, balsamic vinegar, and lemon juice in a bowl. Add salt and pepper, then toss the beet cubes to coat.
  3. Spread the seasoned beets onto a baking sheet lined with parchment paper and bake for 30-35 minutes until fork-tender.
