Ingredients

  • 8 rice paper wrappers
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 carrot, julienned
  • ½ cucumber, sliced into thin strips
  • 1 avocado, sliced
  • Fresh herbs (such as mint or cilantro), chopped
  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Optional: your choice of dipping sauce (such as sweet chili or peanut sauce)


Instructions

  1. Prepare the ingredients: Wash and dry your spinach, then chop it coarsely. Julienne the carrot and slice the cucumber and avocado into thin strips. Prepare any fresh herbs you would like to include.
  2. Make the filling: In a large bowl, combine chopped spinach, crumbled feta cheese, julienned carrot, sliced cucumber, sliced avocado, and fresh herbs. Drizzle with olive oil and lemon juice, and season with salt and pepper. Toss gently to mix.
  3. Soften the rice paper: Fill a shallow bowl with warm water. Dip each rice paper wrapper into the water for about 10-15 seconds, until soft and pliable.
  4. Assemble the rolls: Place a softened rice paper wrapper on a clean surface. Scoop a generous amount of the filling onto the lower third of the wrapper, fold the sides over the filling, then roll it up tightly.
  5. Serve and enjoy: Once all rolls are prepared, serve fresh with your favorite dipping sauce.

Notes

To avoid tearing, don’t overfill the rolls and keep them damp until serving.
