Description

Creamy, herby, and full of savory sausage flavor, this ranch scalloped potatoes dish is a comforting twist on a classic casserole, perfect for chilly nights and festive gatherings.


Ingredients

  • 6 medium Yukon gold or russet potatoes, peeled and thinly sliced
  • 1 pound sausage (chicken or turkey sausage also works)
  • 1 small onion, finely chopped
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk (whole or 2%)
  • 1/2 cup heavy cream
  • 1 packet ranch seasoning mix
  • 1 ½ cups shredded cheddar cheese
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)
  • Optional: 1/2 cup cooked spinach or kale
  • Optional: 1/2 teaspoon smoked paprika
  • Optional: 1/4 cup grated parmesan for topping


Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a skillet over medium heat, cook sausage until browned and crumbled. Transfer to a paper towel-lined plate.
  3. Sauté chopped onion in the same skillet until soft and golden. Set aside with the sausage.
  4. In a saucepan, melt butter. Whisk in flour and cook for 1–2 minutes. Gradually whisk in milk and cream. Stir in ranch seasoning and simmer until thickened. Add 1 cup of cheddar cheese and stir until melted.
  5. In the baking dish, layer potatoes, sausage-onion mix, and sauce. Repeat layers, finishing with sauce. Top with remaining cheddar and optional parmesan.
  6. Cover with foil and bake for 40 minutes. Remove foil and bake an additional 20–25 minutes until golden and bubbly.
  7. Let rest for 10–15 minutes before serving. Garnish with fresh parsley if desired.

Notes

Use a mandoline for even potato slices. This dish can be assembled ahead and refrigerated before baking. Resting helps it set and slice cleanly.
