Creamy, herby, and full of savory sausage flavor, this ranch scalloped potatoes dish is a comforting twist on a classic casserole, perfect for chilly nights and festive gatherings.
Ingredients
- 6 medium Yukon gold or russet potatoes, peeled and thinly sliced
- 1 pound sausage (chicken or turkey sausage also works)
- 1 small onion, finely chopped
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 cups milk (whole or 2%)
- 1/2 cup heavy cream
- 1 packet ranch seasoning mix
- 1 ½ cups shredded cheddar cheese
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
- Optional: 1/2 cup cooked spinach or kale
- Optional: 1/2 teaspoon smoked paprika
- Optional: 1/4 cup grated parmesan for topping
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
- In a skillet over medium heat, cook sausage until browned and crumbled. Transfer to a paper towel-lined plate.
- Sauté chopped onion in the same skillet until soft and golden. Set aside with the sausage.
- In a saucepan, melt butter. Whisk in flour and cook for 1–2 minutes. Gradually whisk in milk and cream. Stir in ranch seasoning and simmer until thickened. Add 1 cup of cheddar cheese and stir until melted.
- In the baking dish, layer potatoes, sausage-onion mix, and sauce. Repeat layers, finishing with sauce. Top with remaining cheddar and optional parmesan.
- Cover with foil and bake for 40 minutes. Remove foil and bake an additional 20–25 minutes until golden and bubbly.
- Let rest for 10–15 minutes before serving. Garnish with fresh parsley if desired.
Notes
Use a mandoline for even potato slices. This dish can be assembled ahead and refrigerated before baking. Resting helps it set and slice cleanly.
