Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 3/4 cup plain yogurt or buttermilk
  • 1/4 cup ranch dressing
  • 3 cloves garlic, minced
  • 3/4 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon chopped fresh parsley (optional, for garnish)
  • Wooden or metal skewers (if using wooden, soak 30 minutes)


Instructions

  1. Marinate the chicken: In a large bowl, whisk together yogurt, ranch dressing, minced garlic, olive oil, smoked paprika, salt, and pepper. Stir in 1/2 cup of the grated Parmesan so it melts into the marinade. Add the cubed chicken, toss to coat, cover, and refrigerate for at least 30 minutes (up to 4 hours).
  2. Prepare skewers and oven/grill: Preheat oven to 425°F (220°C) or heat a grill to medium-high. Thread marinated chicken onto skewers, leaving a little space between pieces for even cooking.
  3. Cook the skewers: Oven method: Place skewers on a lined baking sheet and bake 12–15 minutes, turning once halfway through, until internal temperature reaches 165°F (74°C). Grill method: Grill for about 10–12 minutes, turning occasionally, until nicely charred and cooked through.
  4. Finish with Parmesan and serve: Sprinkle remaining 1/4 cup Parmesan over hot skewers and let rest 2 minutes so cheese softens. Garnish with chopped parsley and serve with lemon wedges or a garlic-herb dipping sauce.

Notes

For the best flavor, marinate the chicken for at least 30 minutes. Use fresh Parmesan cheese for optimal taste and melt.
