A fast and comforting chicken recipe infused with garlic and buttery flavors, perfect for a cozy dinner.
Ingredients
- 1.5 pounds boneless chicken thighs or breasts, trimmed
- Salt and freshly ground black pepper, to taste
- 2 teaspoons smoked paprika
- 1 teaspoon dried thyme or Italian seasoning
- 4 tablespoons unsalted butter
- 4 large garlic cloves, minced
- 2 tablespoons olive oil
- 1/4 cup low-sodium chicken broth or white wine
- 1 tablespoon lemon juice
- 2 tablespoons chopped fresh parsley
- Optional: a pinch of red pepper flakes for warmth
Instructions
- Pat chicken dry with paper towels, then season both sides with salt, pepper, smoked paprika, and thyme.
- In a large skillet over medium-high heat, warm 1 tablespoon of butter and the olive oil until shimmering.
- Add the chicken and sear 3–4 minutes per side until golden brown. Remove chicken to a plate.
- Reduce heat to medium. Add the remaining butter to the skillet. When it melts, add the minced garlic and sauté 30–45 seconds until fragrant.
- Pour in chicken broth (or white wine) and lemon juice, scraping up any browned bits. Let sauce simmer 1–2 minutes.
- Return chicken to the skillet and spoon sauce over each piece. Cook another 3–4 minutes until the internal temperature reaches 165°F (74°C).
- Sprinkle with chopped parsley and a pinch of red pepper flakes if using, then serve immediately.
Notes
Pat the chicken dry for better browning and monitor garlic carefully to avoid burning.
