Description

A cozy, spiced quick bread that’s tender, nostalgic, and effortlessly delicious—perfect for breakfast, snacks, or seasonal baking all year long.


Ingredients

  • 1 cup canned pumpkin puree
  • 2 large eggs
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup neutral oil (canola or vegetable)
  • 1 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together pumpkin puree, granulated sugar, brown sugar, oil, and eggs until smooth.
  3. In a separate bowl, combine flour, baking soda, salt, cinnamon, and nutmeg.
  4. Gently fold the dry ingredients into the wet mixture. Do not overmix.
  5. Pour batter into prepared loaf pan and smooth the top.
  6. Bake for 55–60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Customize with chocolate chips, chopped nuts, or a cream cheese swirl. Avoid overmixing to keep the bread moist and tender. Great for freezing or meal prepping!
