Ingredients
- 1 cup canned pumpkin puree
- 2 large eggs
- ½ cup granulated sugar
- ½ cup brown sugar
- ½ cup neutral oil (canola or vegetable)
- 1 ¾ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- ½ tsp nutmeg
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, whisk together pumpkin puree, granulated sugar, brown sugar, oil, and eggs until smooth.
- In a separate bowl, combine flour, baking soda, salt, cinnamon, and nutmeg.
- Gently fold the dry ingredients into the wet mixture. Do not overmix.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 55–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Customize with chocolate chips, chopped nuts, or a cream cheese swirl. Avoid overmixing to keep the bread moist and tender. Great for freezing or meal prepping!
