Creamy, rich, and comfortingly simple, this potato noodle Alfredo brings cozy vibes with a silky twist on a classic sauce, perfect for chilly evenings or busy nights.


Ingredients

  • 8 oz potato noodles (glass noodles or sweet potato noodles)
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)
  • 3/4 cup grated parmesan cheese
  • Optional: 1 cup sautéed mushrooms or spinach
  • Optional: 1/2 cup cooked chicken or tofu cubes
  • Fresh parsley or chives for garnish


Instructions

  1. Bring a large pot of water to boil. Add potato noodles and cook for 6–8 minutes, until soft and chewy. Drain and set aside.
  2. In a large skillet, melt butter over medium heat. Add minced garlic and cook for 1 minute, until fragrant.
  3. Pour in heavy cream and milk. Stir in salt, pepper, and nutmeg. Let simmer for 3–4 minutes.
  4. Reduce heat to low. Add parmesan cheese and stir continuously until melted and smooth.
  5. Add cooked noodles to the sauce. Toss well to coat and cook for 2–3 more minutes.
  6. Serve immediately, garnished with extra parmesan and herbs.

Notes

For best texture, avoid overcooking the noodles. Simmer the sauce gently to prevent curdling. Optional veggies or proteins should be added after the sauce thickens to avoid watering it down.
