Ingredients
- 8 large eggs
- 1/3 cup milk or dairy-free milk
- 3/4 cup shredded mozzarella cheese
- 1/2 cup pizza sauce (homemade or jarred)
- 3/4 cup chopped vegetables (bell peppers, spinach, mushrooms)
- 3/4 cup diced cooked chicken sausage or turkey pepperoni
- 1/4 cup grated Parmesan
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil or melted butter for greasing
- Optional: fresh basil or chopped parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C) and grease a muffin tin.
- Whisk eggs, milk, salt, pepper, and Italian seasoning in a bowl until smooth.
- Spoon pizza sauce into the bottom of each muffin cup.
- Divide the vegetables and sausage evenly among the cups, and sprinkle with mozzarella.
- Pour the egg mixture into each cup, filling about 3/4 full.
- Sprinkle remaining mozzarella and Parmesan on top.
- Bake for 15–18 minutes, until set.
- Let cool for 5 minutes, then remove and garnish with basil.
Notes
Ensure eggs are at room temperature for even cooking. For creamier centers, reduce baking time slightly.
