Ingredients
- 1 pound thinly sliced halal beef (ribeye or sirloin), or thin steak strips
- 1 large yellow onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
- 1 cup low-sodium beef broth
- 1 tablespoon Worcestershire sauce
- 1 cup shredded provolone or mozzarella (or a mix)
- 4 cups cooked rice or mashed potatoes (for a cozier bowl base)
- Optional garnish: chopped parsley, pickled jalapeños
Instructions
- Cook rice or prepare mashed potatoes and keep warm. Thinly slice the beef, onions, and peppers.
- In a large skillet over medium heat, warm 1 tablespoon olive oil. Add the onions and a pinch of salt, cooking for 10–12 minutes until soft and caramelized. Add the bell pepper and cook another 5 minutes, then transfer to a plate.
- Increase heat to medium-high, add the remaining tablespoon of oil, and sear the beef in a single layer, seasoning with smoked paprika, garlic powder, salt, and pepper. Cook until browned (about 2–3 minutes).
- Return the onions and peppers to the pan, pour in the beef broth and Worcestershire sauce, and simmer for 2–3 minutes. Spoon the mixture over rice or potatoes, top with cheese, and cover or place in a hot oven (350°F) for 5 minutes to melt the cheese.
- Garnish with parsley or pickled jalapeños and enjoy immediately.
Notes
For the most tender bites, slice beef against the grain. To reduce moisture, simmer the filling longer. Cheese options include provolone, mozzarella, or sharp cheddar for richness.
