Ingredients
- 1 cup creamy peanut butter (make sure it’s halal)
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- Optional: 1/2 cup chocolate chips or chopped nuts
Instructions
- Preheat your oven to 350°F (175°C).
- Combine peanut butter and sugar in a large mixing bowl until smooth and creamy.
- Add the egg, vanilla extract, and mix until fully incorporated.
- Whisk together baking soda and salt in a separate bowl, then gradually add to the peanut butter mixture.
- Fold in chocolate chips or chopped nuts if desired.
- Scoop tablespoon-sized portions of dough and roll into balls, spacing them on a lined baking sheet.
- Press down with the back of a fork to create a crisscross pattern.
- Bake for 10-12 minutes or until edges are lightly golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For soft cookies, do not overbake and chill the dough for 30 minutes if possible to prevent spreading.
