Ingredients
- 4 large flour tortillas
- 4 ripe peaches, pitted and sliced
- 1/4 cup sugar (or coconut sugar)
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1/4 cup butter (or halal-certified margarine)
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1 tablespoon lemon juice
- Optional: nuts for topping (pecans or walnuts)
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the sliced peaches with 1/4 cup of sugar and 1 teaspoon of cinnamon in a mixing bowl.
- Let the peach mixture sit for about 10 minutes.
- Spread cream cheese on each tortilla, drizzle with vanilla extract and lemon juice.
- Place a generous helping of the peach mixture on one half of each tortilla.
- Fold the tortillas over to encase the filling.
- Melt the butter (or halal margarine) in a small saucepan.
- Brush the melted butter over each folded tortilla.
- Bake on a parchment-lined baking sheet for 15-20 minutes or until golden brown.
- Whisk powdered sugar and a splash of milk to create a glaze.
- Drizzle the glaze over warm tortillas and sprinkle with nuts before serving.
Notes
Opt for ripe peaches that yield slightly to pressure for the best flavor. Allow the peach mixture to rest to enhance the flavor.
