Ingredients
- 2 ripe peaches, sliced
- 2 ripe nectarines, sliced
- 4 cups fresh arugula or baby spinach
- 1/4 cup crumbled goat cheese or feta
- 1/4 cup toasted almonds or pecans
- Optional: edible flowers for garnish
- For Lemon-Honey Vinaigrette:
- 3 tbsp olive oil
- 1 tbsp fresh lemon juice
- 1 tsp honey
- 1/2 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Wash and slice peaches and nectarines into slim wedges.
- Optional: toss slices in lemon juice to prevent browning.
- In a large mixing bowl or serving platter, layer greens.
- Arrange sliced fruit over the greens in a spiral or overlapping pattern.
- Sprinkle goat cheese or feta over the top.
- Add toasted almonds or pecans for crunch.
