Description

This Peach Nectarine Salad Recipe is the perfect summer combo of sweet, tart, and crisp—juicy fruit, peppery greens, creamy cheese, and crunchy nuts tossed with bright vinaigrette.


Ingredients

  • 2 ripe peaches, sliced
  • 2 ripe nectarines, sliced
  • 4 cups fresh arugula or baby spinach
  • 1/4 cup crumbled goat cheese or feta
  • 1/4 cup toasted almonds or pecans
  • Optional: edible flowers for garnish
  • For Lemon-Honey Vinaigrette:
  • 3 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp honey
  • 1/2 tsp Dijon mustard
  • Salt and pepper to taste


Instructions

  1. Wash and slice peaches and nectarines into slim wedges.
  2. Optional: toss slices in lemon juice to prevent browning.
  3. In a large mixing bowl or serving platter, layer greens.
  4. Arrange sliced fruit over the greens in a spiral or overlapping pattern.
  5. Sprinkle goat cheese or feta over the top.
  6. Add toasted almonds or pecans for crunch.
  7. In a small bowl, whisk together olive oil, lemon juice, honey, Dijon, salt, and pepper to make vinaigrette.
  8. Drizzle vinaigrette over salad just before serving.

Notes
