- 1/2 tsp salt
- 1/2 tsp cinnamon (optional)
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar

- 1 tsp vanilla extract
- 1 1/2 cups fresh or canned peaches, diced and patted dry

Instructions
- Preheat oven to 350°F (175°C). Grease or line a loaf pan.

- In another bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time. Stir in yogurt and vanilla.
- Toss diced peaches with 1 tbsp flour. Gently fold peaches into the batter.
- Combine dry ingredients with wet ingredients, mixing just until combined. Do not overmix.
- Pour batter into prepared loaf pan. Smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Use fresh, ripe peaches for best flavor, but canned or frozen work too — just drain and pat dry. Wrap leftovers tightly and store at room temp for 4 days or freeze for up to 3 months.
