Description

Hearty, creamy, and full of flavor, this Parmesan Sausage Gnocchi Soup is the ultimate cozy one-pot comfort food. It’s rich without being heavy, packed with pillowy gnocchi, savory sausage, and finished with nutty Parmesan cheese.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground Italian sausage (mild or spicy)
  • 1 small yellow onion, diced
  • 3 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon tomato paste
  • 4 cups low-sodium chicken broth
  • 1 (15 oz) can diced tomatoes (undrained)
  • 1 (16 oz) package potato gnocchi
  • 3 cups baby spinach
  • 1 cup heavy cream
  • ¾ cup freshly grated Parmesan cheese
  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large soup pot over medium heat. Add Italian sausage and cook until browned, breaking it up with a spoon.
  2. Stir in diced onion and cook until translucent, about 3–4 minutes. Add garlic, Italian seasoning, red pepper flakes, and tomato paste. Stir for 1 minute until fragrant.
  3. Pour in chicken broth and diced tomatoes. Stir and bring to a low boil.
  4. Add gnocchi to the pot. Simmer for 5–7 minutes or until gnocchi float and are tender.
  5. Reduce heat and stir in baby spinach until wilted. Add heavy cream and Parmesan. Stir until creamy and well blended. Season with salt and pepper to taste.

Notes

For a lighter version, use half-and-half instead of heavy cream. To make it gluten-free, use gluten-free gnocchi. Feel free to add mushrooms, carrots, or zucchini for extra veggies.
