Description

Tender, slightly spiced pancakes perfect for brunch or holiday mornings.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon fine salt
  • 1 teaspoon ground cinnamon (optional)
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tablespoons melted butter or neutral oil
  • 1 teaspoon vanilla extract
  • Butter or oil for the pan
  • Optional toppings: Maple syrup, sliced apples, warm fruit compote, or a simple streusel


Instructions

  1. Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until evenly combined.
  2. Combine wet ingredients: In a separate bowl, whisk the milk, egg, melted butter, and vanilla until smooth.
  3. Make the batter: Pour the wet mixture into the dry ingredients and gently stir until just combined. A few small lumps are okay.
  4. Rest the batter: Let the batter sit for 5–10 minutes.
  5. Heat the pan: Warm a nonstick skillet or griddle over medium heat. Lightly grease with butter or oil.
  6. Cook the pancakes: For each pancake, pour about 1/4 cup of batter onto the skillet. Cook until bubbles form and edges look set, about 2–3 minutes. Flip and cook the other side for 1–2 minutes more.
  7. Keep warm and serve: Transfer cooked pancakes to a plate and keep warm in a low oven. Serve stacks with maple syrup or toppings.

Notes

Use fresh baking powder for best results. Don’t overmix the batter.
