Description

Warm, crispy, and loaded with ranch-seasoned cheesy goodness, these oven-baked potatoes are the ultimate comfort food side dish, perfect for weeknights or holidays.


Ingredients

  • 6 medium Yukon Gold or Russet potatoes, diced
  • 3 tbsp olive oil
  • 1 packet ranch seasoning mix (store-bought or homemade)
  • 1 ½ cups shredded cheddar cheese
  • ½ cup shredded mozzarella (optional)
  • ½ tsp smoked paprika
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 2 tbsp chopped green onions (for garnish)
  • Fresh parsley (optional)


Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, toss diced potatoes with olive oil, ranch seasoning, garlic powder, paprika, salt, and pepper until evenly coated.
  3. Spread potatoes in a single layer on the baking sheet. Bake for 25–30 minutes, flipping halfway through, until golden and crisp.
  4. Sprinkle shredded cheddar and optional mozzarella over the potatoes. Bake an additional 8–10 minutes until cheese is melted and bubbly.
  5. Garnish with green onions and parsley. Serve hot.

Notes

For best crispiness, avoid overcrowding the baking sheet and always dry your potatoes before seasoning. Potatoes can be prepped ahead and stored in the fridge, then baked fresh.
