Description

Bold, buttery roasted onions loaded with Cajun spice, garlic, and aromatic herbs, this viral side dish is sweet, savory, and packed with comforting flavor.


Ingredients

  • 4 large sweet onions (Vidalia or yellow)
  • 6 tablespoons butter or plant-based alternative
  • 1 teaspoon garlic powder
  • 1 tablespoon Cajun seasoning or Old Bay
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • Chopped parsley or dried herbs, for garnish
  • Optional: corn on the cob, sliced bell peppers, mushrooms


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the onions and slice an “X” halfway down from the top, keeping the base intact.
  3. In a bowl, mix softened butter with garlic powder, Cajun seasoning, paprika, and black pepper.
  4. Place each onion on a sheet of foil.
  5. Stuff the butter mixture into the onion crevices generously.
  6. Wrap each onion tightly in foil and place on a baking tray.
  7. Bake for 40–50 minutes until tender, aromatic, and caramelized.
  8. Carefully unwrap (watch for steam) and spoon any melted butter over the top before serving.
  9. Garnish with parsley or herbs and serve warm.

Notes

For added depth, mix a teaspoon of honey into the butter or sprinkle with crispy shallots before serving. Serve alongside rice, casseroles, or enjoy solo as a hearty appetizer.
