Description
A cozy and hearty one-pot meal that combines ground beef, pasta, and nostalgic flavors, perfect for sweater weather.
Ingredients
- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced (optional)
- 2 cups elbow macaroni or your preferred pasta
- 1 (14.5 oz) can diced tomatoes
- 2 cups beef or vegetable broth
- 1 tbsp tomato paste
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 cup shredded cheese (optional, for topping)
- Fresh parsley, chopped, for garnish
Instructions
- Heat 2 tablespoons of olive oil in a large pot over medium-high heat.
- Add the diced onion and cook until translucent, about 3–4 minutes.
- Add the ground beef, breaking it up with a spoon, and cook until no longer pink. Drain excess fat if needed.
- Stir in the minced garlic, bell pepper, tomato paste, smoked paprika, and oregano. Cook 1–2 minutes until fragrant.
- Add the diced tomatoes and broth, scraping up any browned bits from the bottom of the pot.
- Stir in the pasta and bring the pot to a gentle boil.
- Reduce heat to low, cover, and simmer for 10–12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
- Taste and season with salt and pepper.
- Sprinkle with shredded cheese and chopped parsley before serving.
Notes
For a creamier finish, stir in a splash of cream or a dollop of cream cheese. Can be customized with additional vegetables or gluten-free pasta.
