Description

A cozy and hearty one-pot meal that combines ground beef, pasta, and nostalgic flavors, perfect for sweater weather.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (optional)
  • 2 cups elbow macaroni or your preferred pasta
  • 1 (14.5 oz) can diced tomatoes
  • 2 cups beef or vegetable broth
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cup shredded cheese (optional, for topping)
  • Fresh parsley, chopped, for garnish


Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium-high heat.
  2. Add the diced onion and cook until translucent, about 3–4 minutes.
  3. Add the ground beef, breaking it up with a spoon, and cook until no longer pink. Drain excess fat if needed.
  4. Stir in the minced garlic, bell pepper, tomato paste, smoked paprika, and oregano. Cook 1–2 minutes until fragrant.
  5. Add the diced tomatoes and broth, scraping up any browned bits from the bottom of the pot.
  6. Stir in the pasta and bring the pot to a gentle boil.
  7. Reduce heat to low, cover, and simmer for 10–12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
  8. Taste and season with salt and pepper.
  9. Sprinkle with shredded cheese and chopped parsley before serving.

Notes

For a creamier finish, stir in a splash of cream or a dollop of cream cheese. Can be customized with additional vegetables or gluten-free pasta.
