Ingredients
- 4 medium Yukon Gold potatoes, chopped into bite-sized cubes
- 4 halal chicken or beef sausages, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, cut into thick wedges
- 3 garlic cloves, minced
- 3 tablespoons olive oil
- 1 teaspoon dried rosemary
- 1 teaspoon smoked paprika
- ¾ teaspoon salt
- ½ teaspoon ground black pepper
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or foil.
- Chop potatoes, slice sausages, onions, and bell peppers. Add everything to a large bowl.
- Add olive oil, garlic, rosemary, paprika, salt, and pepper. Toss to coat evenly.
- Spread the mixture onto the sheet pan in a single layer. Don’t overcrowd.
- Roast for 35–40 minutes, flipping halfway through, until sausage is golden and potatoes are crisp and tender.
- Garnish with fresh parsley and serve hot with your favorite dip or side salad.
Notes
For extra crispiness, ensure everything is spaced out on the pan. Add chili flakes for a spicy kick or swap in seasonal veggies like carrots or Brussels sprouts.
