Description

Ingredients

  • 4 medium Yukon Gold potatoes, chopped into bite-sized cubes
  • 4 halal chicken or beef sausages, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, cut into thick wedges
  • 3 garlic cloves, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon smoked paprika
  • ¾ teaspoon salt
  • ½ teaspoon ground black pepper
  • Chopped fresh parsley for garnish (optional)


Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or foil.
  2. Chop potatoes, slice sausages, onions, and bell peppers. Add everything to a large bowl.
  3. Add olive oil, garlic, rosemary, paprika, salt, and pepper. Toss to coat evenly.
  4. Spread the mixture onto the sheet pan in a single layer. Don’t overcrowd.
  5. Roast for 35–40 minutes, flipping halfway through, until sausage is golden and potatoes are crisp and tender.
  6. Garnish with fresh parsley and serve hot with your favorite dip or side salad.

Notes

For extra crispiness, ensure everything is spaced out on the pan. Add chili flakes for a spicy kick or swap in seasonal veggies like carrots or Brussels sprouts.
