Description
A cozy and easy one-pan dinner that combines savory and sweet flavors with balsamic glaze and caramelized chicken.
Ingredients
- 4 boneless, skinless chicken thighs (about 1.5 pounds)
- Salt and freshly ground black pepper, to taste
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 small shallot, thinly sliced
- 1/3 cup balsamic vinegar
- 2 tablespoons honey
- 1/2 cup low-sodium chicken broth
- 1 tablespoon Dijon mustard
- 1/2 teaspoon dried thyme or 1 teaspoon fresh thyme leaves
- 1 cup halved cherry tomatoes
- 1 medium apple, thinly sliced (optional, for fall warmth)
- Fresh parsley, chopped, for garnish
Instructions
- Preheat the oven to 400°F (200°C). Pat the chicken dry and season both sides with salt and pepper.
- Sear the chicken thighs skin-side down if using skin-on, or just sear for 3–4 minutes per side until golden brown. Transfer chicken to a plate.
- Reduce heat to medium, add shallot and garlic to the skillet, and sauté 1–2 minutes until fragrant. Stir in balsamic vinegar, honey, chicken broth, Dijon mustard, and thyme. Scrape up brown bits and simmer for 2–3 minutes until slightly thickened.
- Stir in cherry tomatoes and apple slices.
- Return the seared chicken to the skillet, spooning some sauce over the top.
- Transfer the skillet to the preheated oven and roast for 12–15 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
- Remove from the oven, let rest for 5 minutes, then spoon pan sauce over the chicken and garnish with parsley.
Notes
Use an ovenproof skillet for even heating. Don’t overcrowd the pan during searing, and check chicken doneness with a thermometer.
