Rich, fudgy, and incredibly easy to make, these one bowl eggless brownie bites are perfect for fall cravings, lunchbox treats, or cozy nights in. No mixer needed, just simple ingredients and big chocolate flavor.
Ingredients
- 1 cup all-purpose flour
- ½ cup unsweetened cocoa powder (Dutch process preferred)
- ¾ cup brown sugar
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup plain thick yogurt (regular or dairy-free)
- ⅓ cup neutral oil (sunflower or avocado oil)
- 1 tsp vanilla extract
- 2 tbsp strong brewed coffee or warm water
- ½ cup semi-sweet chocolate chips
- ¼ cup chopped pecans or walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a mini muffin tin or line with silicone cups.
- In a large mixing bowl, whisk flour, cocoa powder, sugar, baking soda, and salt.
- Add yogurt, oil, vanilla, and coffee. Mix with a spatula until fully combined. Batter will be thick.
- Fold in chocolate chips and chopped nuts if using.
- Divide batter among muffin cups, filling each about ¾ full.
- Bake for 12–14 minutes until tops are set and a toothpick comes out with moist crumbs.
- Cool in pan for 5 minutes, then transfer to a cooling rack. Enjoy warm or chilled.
Notes
For best texture, use thick yogurt. Coffee enhances chocolate flavor without adding a coffee taste. Slightly underbaking gives a gooier bite. Great served warm or cold.
