Description

A warm and comforting spiced apple cake, perfect for gatherings and seasonal celebrations, topped with a simple glaze.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp fine salt
  • 1 tbsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 3/4 cup sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup plain yogurt
  • 1 tsp vanilla extract
  • 2 medium apples, peeled and diced
  • 1/2 cup chopped walnuts (optional)
  • For the glaze: 1 cup powdered sugar
  • 23 tbsp milk
  • 1/2 tsp vanilla


Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8- or 9-inch round pan and line with parchment.
  2. Whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a bowl until evenly combined.
  3. Beat the sugars with eggs in a large bowl until smooth. Add oil, yogurt, and vanilla, mixing until combined.
  4. Fold the dry mix into the wet mix gently, then stir in the diced apples and walnuts. Avoid overmixing to keep the cake tender.
  5. Pour batter into the prepared pan and bake for 35–45 minutes, until a toothpick comes out clean and the top is golden.
  6. Cool for 10 minutes in the pan, then transfer to a rack. Whisk glaze ingredients and drizzle over the slightly warm cake.

Notes

Measure flour correctly to prevent dense cakes. Use room-temperature eggs for better lift.
