Description
A warm and comforting spiced apple cake, perfect for gatherings and seasonal celebrations, topped with a simple glaze.
Ingredients
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp fine salt
- 1 tbsp ground cinnamon
- 1/2 tsp ground nutmeg
- 3/4 cup sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup plain yogurt
- 1 tsp vanilla extract
- 2 medium apples, peeled and diced
- 1/2 cup chopped walnuts (optional)
- For the glaze: 1 cup powdered sugar
- 2–3 tbsp milk
- 1/2 tsp vanilla
Instructions
- Preheat oven to 350°F (175°C). Grease an 8- or 9-inch round pan and line with parchment.
- Whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a bowl until evenly combined.
- Beat the sugars with eggs in a large bowl until smooth. Add oil, yogurt, and vanilla, mixing until combined.
- Fold the dry mix into the wet mix gently, then stir in the diced apples and walnuts. Avoid overmixing to keep the cake tender.
- Pour batter into the prepared pan and bake for 35–45 minutes, until a toothpick comes out clean and the top is golden.
- Cool for 10 minutes in the pan, then transfer to a rack. Whisk glaze ingredients and drizzle over the slightly warm cake.
Notes
Measure flour correctly to prevent dense cakes. Use room-temperature eggs for better lift.
