Cozy, bite-sized muffins that combine classic pancake flavors with the convenience of a muffin, perfect for autumn.
Ingredients
- 1 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 large egg
- 1 1/4 cups milk
- 3 tablespoons unsalted butter, melted and slightly cooled
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon (optional)
- Maple syrup or honey, for serving
Instructions
- Preheat your oven to 375°F (190°C) and grease a mini muffin tin or line with paper cups.
- Mix together flour, sugar, baking powder, salt, and cinnamon in a large bowl.
- Combine the egg, milk, melted butter, and vanilla in a separate bowl until smooth.
- Bring the wet mixture into the dry ingredients and stir gently until just combined.
- Spoon the batter into the mini cups about 3/4 full.
- Bake for 9–12 minutes until golden and a toothpick comes out clean.
- Finish by letting them cool for 3 minutes before transferring to a rack and serving warm with maple syrup or powdered sugar.
Notes
For a savory twist, consider adding cheese or herbs. These muffins are also excellent paired with pumpkin soup.
