Description

This Melt In Your Mouth Chicken is tender and flavorful, perfect for seasonal gatherings with minimal hands-on time.

Ingredients

  • 4 boneless, skinless chicken thighs or breasts (about 1.5–2 lbs)
  • 1 cup plain yogurt (or a dairy alternative)
  • 1 tablespoon lemon juice
  • 1 teaspoon baking soda
  • 2 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil or melted butter
  • 1 teaspoon smoked paprika
  • Fresh herbs for garnish (parsley or thyme)

Instructions

  1. Marinate: In a large bowl, whisk together yogurt, lemon juice, baking soda, salt, pepper, garlic, olive oil, and paprika. Add the chicken, toss to coat, cover, and refrigerate for 120–360 minutes (overnight is fine).
  2. Preheat: When ready, preheat the oven to 375°F (190°C). Lightly grease a baking dish.
  3. Prepare: Remove chicken from the marinade, shaking off excess, and arrange pieces in the dish in a single layer.
  4. Bake: Cook for 20–30 minutes depending on thickness—use a thermometer to confirm 165°F (74°C) internal temperature.
  5. Rest: Let the chicken rest covered for 5–10 minutes.
  6. Serve: Garnish with fresh herbs and serve with roasted vegetables, mashed potatoes, or a crisp salad.

Notes

For extra color, finish under the broiler for 1–2 minutes, watching closely. Use room-temperature chicken for even cooking.
