Ingredients
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- ½ teaspoon red pepper flakes (optional)
- 4 cups chicken broth
- ½ cup sun-dried tomatoes, chopped
- 2 large cooked chicken breasts, shredded
- 1 cup heavy cream (or half-and-half)
- ½ cup freshly grated Parmesan cheese
- Salt and black pepper to taste
- Fresh basil or parsley for garnish (optional)
- Extra Parmesan shavings for garnish (optional)
- Crusty bread or garlic toast (optional)
Instructions
- Heat olive oil and butter in a large pot over medium heat. Add diced onion, carrots, and celery. Cook for about 5 minutes until softened.
- Stir in garlic, oregano, thyme, and red pepper flakes. Cook for 1 minute until fragrant.
- Pour in chicken broth, scraping up any browned bits. Add sun-dried tomatoes and shredded chicken. Simmer for 10 minutes.
- Reduce heat to low. Stir in heavy cream and Parmesan cheese until smooth. Season with salt and pepper to taste. Do not boil after adding cream.
- Ladle into bowls. Garnish with basil or parsley and extra Parmesan if desired. Serve with crusty bread.
Notes
For best flavor, use freshly grated Parmesan. Keep heat low when adding cream to prevent curdling. Rotisserie chicken works perfectly for convenience.
