Ingredients
- Boneless skinless chicken breasts or thighs
- 1/2 cup sun-dried tomatoes (oil-packed, drained and chopped)
- 3 cloves garlic (minced)
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes
- Salt and black pepper to taste
- 1 tbsp cornstarch + 2 tbsp water (optional, for thickening)
Instructions
- Place chicken breasts or thighs in the bottom of the slow cooker. Season with salt, pepper, and a pinch of Italian seasoning.
- In a bowl, whisk together chicken broth, garlic, heavy cream, Parmesan cheese, sun-dried tomatoes, red pepper flakes, and remaining Italian seasoning.
- Pour the sauce mixture over the chicken.
- Cover and cook on low for 5–6 hours or high for 2.5–3.5 hours, until chicken is tender and fully cooked (165°F internal temperature).
- Optional: For a thicker sauce, stir in cornstarch slurry during the last 30 minutes and cook uncovered.
- Once cooked, stir the sauce and serve chicken whole or shredded.
- Serve over mashed potatoes, pasta, rice, or creamy polenta.
Notes
Make ahead by assembling ingredients in the crock pot insert the night before. Store leftovers in the fridge up to 4 days or freeze for 3 months. Best served with pasta, rice, or crusty bread to soak up the sauce.
