Description

Tender chicken slow cooked in a creamy garlic Parmesan sauce with sun-dried tomatoes and herbs. This Marry Me Chicken Crock Pot recipe is comforting, flavorful, and perfect for both weeknights and special occasions.


Ingredients

  • Boneless skinless chicken breasts or thighs
  • 1/2 cup sun-dried tomatoes (oil-packed, drained and chopped)
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes
  • Salt and black pepper to taste
  • 1 tbsp cornstarch + 2 tbsp water (optional, for thickening)


Instructions

  1. Place chicken breasts or thighs in the bottom of the slow cooker. Season with salt, pepper, and a pinch of Italian seasoning.
  2. In a bowl, whisk together chicken broth, garlic, heavy cream, Parmesan cheese, sun-dried tomatoes, red pepper flakes, and remaining Italian seasoning.
  3. Pour the sauce mixture over the chicken.
  4. Cover and cook on low for 5–6 hours or high for 2.5–3.5 hours, until chicken is tender and fully cooked (165°F internal temperature).
  5. Optional: For a thicker sauce, stir in cornstarch slurry during the last 30 minutes and cook uncovered.
  6. Once cooked, stir the sauce and serve chicken whole or shredded.
  7. Serve over mashed potatoes, pasta, rice, or creamy polenta.

Notes

Make ahead by assembling ingredients in the crock pot insert the night before. Store leftovers in the fridge up to 4 days or freeze for 3 months. Best served with pasta, rice, or crusty bread to soak up the sauce.
