Ingredients
- 2 ripe mangoes, diced
- 1 large cucumber, peeled and diced
- 1 cup fresh blueberries
- 1 ripe avocado, diced
- 1 small red onion, thinly sliced
- 2 tablespoons fresh cilantro, chopped
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon honey
- Salt and black pepper to taste
- Optional: 1 small jalapeño, seeded and minced
Instructions
- Prepare the produce: Peel and dice the mangoes, dice the cucumber, slice the red onion thinly, halve the blueberries if large, and dice the avocado just before assembling to prevent browning.
- Make the dressing: In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper until slightly emulsified.
- Combine the salad: In a large mixing bowl, gently toss mango, cucumber, blueberries, red onion, and cilantro. Add the jalapeño if you like heat.
- Dress and finish: Pour the dressing over the salad and toss lightly to coat. Add avocado last and fold in gently so it keeps its shape.
- Chill briefly: Let the salad sit in the fridge for 10-15 minutes to let flavors marry, then taste and adjust seasoning.
