These Low-Calorie Oatmeal Muffins are a cozy, wholesome treat made with rolled oats, almond milk, and natural sweeteners. A perfect breakfast or snack that’s light, fluffy, and easy to make.
Ingredients
- 1 cup rolled oats
- 1 cup unsweetened almond milk
- 1 cup whole wheat flour
- 1/3 cup honey or maple syrup
- 1/4 cup neutral oil (like sunflower or avocado)
- 2 eggs
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 tsp vanilla extract
- Optional: 1/3 cup raisins, chopped apples, or dark chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line or grease a 12-cup muffin tin.
- In a large bowl, combine oats and almond milk. Let soak for 10 minutes.
- Add eggs, honey/maple syrup, oil, and vanilla to the oat mixture. Stir until well combined.
- Gently mix in flour, baking powder, baking soda, cinnamon, and salt. Stir just until no dry streaks remain.
- Fold in any optional add-ins like raisins, chopped apples, or chocolate chips.
- Divide batter into muffin cups, filling each about 3/4 full. Bake for 18–22 minutes or until a toothpick comes out clean.
- Let muffins cool in the pan for 5 minutes before transferring to a wire rack.
Notes
For best results, use rolled oats and allow them to soak fully. Avoid overmixing to keep muffins light and fluffy.
