Description

This Longhorn-inspired Grilled Chicken & Strawberry Salad is fresh, sweet, savory, and packed with protein. Loaded with crisp greens, juicy fruit, grilled chicken, crunchy pecans, and creamy feta, it’s tossed in a tangy raspberry vinaigrette for a perfect balance of flavors. Ideal as a light lunch or dinner.


Ingredients

  • 2 cups spring mix greens

  • 1 grilled chicken breast, sliced

  • 45 fresh strawberries, sliced

  • ¼ cup seedless red grapes, halved

  • ¼ cup mandarin orange segments (canned or fresh)

  • 2 tablespoons crumbled feta cheese

  • 2 tablespoons candied pecans

  • 3 tablespoons raspberry vinaigrette (store-bought or homemade)

  • Optional: freshly cracked pepper or a drizzle of balsamic reduction


Instructions

  • Prepare Ingredients: Wash and dry all fruits and greens. Slice the strawberries, halve the grapes, and cut the chicken into strips.
