Description

A cozy and flavorful burrito filled with seasoned beef, melty cheese, and fresh toppings, perfect for any gathering.


Ingredients

  • 4 large flour tortillas
  • 1 lb halal ground beef
  • 1 packet taco seasoning or 2 tbsp homemade taco mix
  • 1 cup cooked rice (optional)
  • 1 cup refried beans (warmed)
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup nacho cheese sauce
  • 1/2 cup pico de gallo or diced tomatoes
  • 1/4 cup diced onions
  • 1/2 cup shredded lettuce
  • 1/4 cup sour cream or plain yogurt
  • 1/4 cup sliced jalapeños (optional)
  • 2 tbsp vegetable oil or butter for toasting
  • Lime wedges and cilantro for garnish


Instructions

  1. Heat a skillet over medium-high heat, add the ground beef, and cook until browned.
  2. Add taco seasoning and a splash of water (about 1/4 cup). Simmer until thickened and well-coated.
  3. Heat refried beans and rice separately in small pots or the microwave until hot.
  4. Lay a tortilla flat. Spoon down the center: 1/4 cup rice (if using), 2 tablespoons warmed refried beans, 1/4 cup seasoned beef, a drizzle of nacho cheese sauce, and a sprinkle of shredded cheese.
  5. Add pico de gallo, onions, and a few jalapeño slices if you like heat.
  6. Fold the sides of the tortilla over the filling, then roll tightly.
  7. In a clean skillet, heat 1 tbsp oil or butter over medium heat. Place the burrito seam-side down and toast 2–3 minutes per side until golden and the cheese is melty.
  8. Slice in half, top with shredded lettuce, sour cream, cilantro, and a squeeze of lime.

Notes

Don’t overfill the burrito to prevent tears during rolling. Keep burritos wrapped in a warm towel until ready to serve.
