Hearty and comforting, this casserole brings together seasoned sausage, creamy ranch-spiced eggs, hash browns, and melty cheddar for the ultimate cool-weather crowd-pleaser.
Ingredients
- 1 lb ground chicken or beef sausage (seasoned)
- 1 packet ranch seasoning mix
- 4 large eggs
- 2 cups frozen shredded hash browns (thawed)
- 1/2 cup milk
- 1 1/2 cups shredded cheddar cheese
- 1/4 cup chopped green onions
- Salt and pepper to taste
- Cooking spray or oil for greasing
- Optional: 1/2 cup diced bell peppers
- Optional: 1/2 cup sautéed mushrooms
- Optional: 1/4 tsp crushed red pepper
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
- In a large skillet over medium heat, cook the sausage until browned and cooked through. Drain excess fat. Add bell peppers or mushrooms if using and sauté until soft.
- In a mixing bowl, whisk together the eggs, milk, ranch seasoning, salt, and pepper.
- In the greased baking dish, layer the hash browns, cooked sausage, shredded cheese, and green onions.
- Pour the egg mixture evenly over the ingredients in the dish and gently shake to distribute.
- Bake uncovered for 35–40 minutes, until golden and the center is fully set.
- Let rest for 5–10 minutes before slicing and serving.
Notes
To make ahead, assemble and refrigerate overnight. For a vegetarian version, use plant-based sausage and load up on mushrooms, spinach, or bell peppers. Add a streusel-style topping of buttered cracker crumbs for extra texture.
