Description

Hearty and comforting, this casserole brings together seasoned sausage, creamy ranch-spiced eggs, hash browns, and melty cheddar for the ultimate cool-weather crowd-pleaser.


Ingredients

  • 1 lb ground chicken or beef sausage (seasoned)
  • 1 packet ranch seasoning mix
  • 4 large eggs
  • 2 cups frozen shredded hash browns (thawed)
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Cooking spray or oil for greasing
  • Optional: 1/2 cup diced bell peppers
  • Optional: 1/2 cup sautéed mushrooms
  • Optional: 1/4 tsp crushed red pepper


Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook the sausage until browned and cooked through. Drain excess fat. Add bell peppers or mushrooms if using and sauté until soft.
  3. In a mixing bowl, whisk together the eggs, milk, ranch seasoning, salt, and pepper.
  4. In the greased baking dish, layer the hash browns, cooked sausage, shredded cheese, and green onions.
  5. Pour the egg mixture evenly over the ingredients in the dish and gently shake to distribute.
  6. Bake uncovered for 35–40 minutes, until golden and the center is fully set.
  7. Let rest for 5–10 minutes before slicing and serving.

Notes

To make ahead, assemble and refrigerate overnight. For a vegetarian version, use plant-based sausage and load up on mushrooms, spinach, or bell peppers. Add a streusel-style topping of buttered cracker crumbs for extra texture.
