Ingredients
- 4 large russet potatoes, peeled and cubed
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- ½ cup chopped green onions (plus extra for garnish)
- ½ cup crispy Turkey bacon bits (halal alternative)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the potatoes by adding them to a large pot filled with water and boiling until fork-tender, about 15-20 minutes.
- Mix the sour cream, both cheeses, green onions, bacon bits, olive oil, garlic powder, onion powder, salt, and pepper in a large bowl, then gently fold in the cooked potatoes.
- Transfer the mixture to a greased 9×13 inch casserole dish, spreading it evenly.
- Bake for 25-30 minutes until the top is golden and bubbly.
- Serve and enjoy garnished with additional green onions.
