Ingredients

  • 4 salmon fillets (about 6 ounces each)
  • 2 tablespoons olive oil
  • 4 cloves of garlic, minced
  • 1 lemon (juice and zest)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon slices (for serving)
  • Cooked quinoa or brown rice (optional)
  • Seasonal veggies (like asparagus or broccoli) (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Whisk together the olive oil, minced garlic, lemon juice, and lemon zest in a small bowl. Add salt and pepper to taste.
  3. Place the salmon fillets in a shallow dish or a zip-top bag and pour the lemon-garlic mixture over them. Marinate for at least 15-30 minutes.
  4. Line a baking sheet with parchment paper or aluminum foil. Lay the salmon fillets skin-side down and pour any remaining marinade over the top. Add lemon slices on each fillet.
