Description

A simple and delightful peach cobbler that showcases the vibrant flavors of fresh peaches, perfect for lazy afternoons and gatherings.

Ingredients

  • 4 cups fresh ripe peaches, sliced (or 2 cans of peaches, drained if using)
  • 1 cup granulated sugar (adjust based on peach sweetness)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 cup milk (or a non-dairy milk of your choice)
  • 1/2 cup unsalted butter, melted (or halal butter substitute)
  • 1/2 teaspoon salt
  • Ground cinnamon, for sprinkling (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the fruit by tossing the sliced peaches with 1/4 cup of sugar and vanilla extract.
  3. Make the batter by whisking together flour, remaining sugar, baking powder, salt, and milk until smooth. Gently add melted butter.
  4. Combine the batter and peach mixture in a greased 9×13-inch baking dish without stirring.
  5. Bake for 40-45 minutes or until golden brown and a toothpick comes out clean.
  6. Serve slightly cooled with optional vanilla ice cream or whipped cream.

Notes

For a crunchy topping, mix oats, brown sugar, and melted butter and add before baking. Store at room temperature for up to 2 days or refrigerated for a week.
