Ingredients
- 4 cups fresh ripe peaches, sliced (or 2 cans of peaches, drained if using)
- 1 cup granulated sugar (adjust based on peach sweetness)
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1 cup milk (or a non-dairy milk of your choice)
- 1/2 cup unsalted butter, melted (or halal butter substitute)
- 1/2 teaspoon salt
- Ground cinnamon, for sprinkling (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the fruit by tossing the sliced peaches with 1/4 cup of sugar and vanilla extract.
- Make the batter by whisking together flour, remaining sugar, baking powder, salt, and milk until smooth. Gently add melted butter.
- Combine the batter and peach mixture in a greased 9×13-inch baking dish without stirring.
- Bake for 40-45 minutes or until golden brown and a toothpick comes out clean.
- Serve slightly cooled with optional vanilla ice cream or whipped cream.
Notes
For a crunchy topping, mix oats, brown sugar, and melted butter and add before baking. Store at room temperature for up to 2 days or refrigerated for a week.
