Ingredients
- 8 lamb chops (about 1-inch thick)
- 3 tablespoons of extra-virgin olive oil
- 3 cloves of garlic, minced
- 2 tablespoons of fresh rosemary, chopped (or 1 tablespoon dried)
- 1 tablespoon of fresh thyme, chopped (or ½ tablespoon dried)
- Salt and freshly ground black pepper, to taste
- 1 lemon, juiced
- Optional: Fresh herbs for garnish (like parsley or extra rosemary)
Instructions
- Prepare the marinade: In a small bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, lemon juice, salt, and pepper.
- Marinate the lamb chops: Place the lamb chops in a large resealable plastic bag or a shallow dish. Pour the marinade over the chops and refrigerate for at least 30 minutes to 2 hours.
- Preheat the grill or oven: Preheat the grill to medium-high heat or the oven to 400°F (200°C).
- Cook the lamb chops: Remove lamb chops from the marinade and grill for 3-4 minutes on each side for medium-rare or bake for 15-20 minutes in the oven, flipping halfway.
- Rest and serve: Let the lamb chops rest for 5 minutes before serving warm, garnished with fresh herbs if desired.
