Ingredients
- 1 cup shredded mozzarella cheese
- 1/2 cup cream cheese, softened
- 1 large egg
- 1/2 cup almond flour
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup deli corned beef, chopped
- 1/2 cup sauerkraut, drained
- 1/2 cup shredded Swiss cheese
- 1/4 cup Thousand Island dressing
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
- Combine the shredded mozzarella and softened cream cheese in a large microwave-safe bowl. Microwave for about 1 minute, then stir until smooth. Add the egg, almond flour, garlic powder, onion powder, salt, and pepper, mixing until a dough forms.
- Roll out the dough between two sheets of parchment paper into a rectangle about 1/4 inch thick.
- Remove the top parchment and layer the chopped corned beef, sauerkraut, shredded Swiss cheese, and a drizzle of Thousand Island dressing over the dough, leaving about an inch border.
- Roll the dough into a log, sealing the edges tightly.
- Slice the log into even pieces, about 1 inch wide.
- Bake the roll-ups for about 15-20 minutes, or until golden brown and crispy.
- Serve warm, garnished with fresh parsley if desired, and with extra Thousand Island dressing on the side for dipping.
Notes
Dough should be stretchy and not overly sticky; if too sticky, add more almond flour. Refrigerate if too soft to roll. Use a serrated knife for slicing.
