Description

Delightful low-carb roll-ups made with layers of savory corned beef, tangy sauerkraut, and melted cheese, all wrapped in a crispy shell.


Ingredients

  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 1 large egg
  • 1/2 cup almond flour
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup deli corned beef, chopped
  • 1/2 cup sauerkraut, drained
  • 1/2 cup shredded Swiss cheese
  • 1/4 cup Thousand Island dressing
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat the oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
  2. Combine the shredded mozzarella and softened cream cheese in a large microwave-safe bowl. Microwave for about 1 minute, then stir until smooth. Add the egg, almond flour, garlic powder, onion powder, salt, and pepper, mixing until a dough forms.
  3. Roll out the dough between two sheets of parchment paper into a rectangle about 1/4 inch thick.
  4. Remove the top parchment and layer the chopped corned beef, sauerkraut, shredded Swiss cheese, and a drizzle of Thousand Island dressing over the dough, leaving about an inch border.
  5. Roll the dough into a log, sealing the edges tightly.
  6. Slice the log into even pieces, about 1 inch wide.
  7. Bake the roll-ups for about 15-20 minutes, or until golden brown and crispy.
  8. Serve warm, garnished with fresh parsley if desired, and with extra Thousand Island dressing on the side for dipping.

Notes

Dough should be stretchy and not overly sticky; if too sticky, add more almond flour. Refrigerate if too soft to roll. Use a serrated knife for slicing.
